In our last blog we already introduced blogger Jil to you, who we met at our blogger event in Tyrol (you can read about about it, here: „MUSTANG goes Jochberg“). Over a smoothie, the native Lüneburger not only told us a bit about her attitude towards fashion, but also shared some information about her vegan lifestyle (click here to read the whole interview: „A coffee with Jil“).

Today we would like to present one of Jil’s favorite recipes. The homemade vegan brownie ice cream not only tempts chocolate-lovers, but is also a dessert-heaven on earth for everyone. So get ready to float away on a cloud of chocolate:

Here’s everything you need:
2-3 frozen bananas
1 additional banana, fresh
2 teaspoons flaxseeds
1-2 teaspoons cocoa powder
½ teaspoon cinnamon
½ teaspoon vanilla powder
optional 1 teaspoon matcha powder
1-2 teaspoons carob powder for the chocolate sauce

Place all ingredients (except the carob powder) in a blender. Helpful hint: if you put the unfrozen banana in the blender first, mixing will be easier.

This is already the basis of your ice cream and you can start to prepare the toppings.

Jil makes the chocolate sauce with 1-2 teaspoons carob powder, which she simply mixes with water. It’s best to start with a small amount of water in a bowl, and gradually add the powder. First mix these two ingredients and keep adding water until the chocolate sauce has the right consistency, depending on how you like it. While Jil likes the chocolate sauce as it is explained in the recipe, you can add some coconut sugar, if you prefer it sweeter.

Brownie pieces are another topping. You can bake these yourself or try Jil’s quick-fix and cut chocolate health bars in thin strips and then roll them into bits.

To finish, you can now add cashew nuts and vanilla powder or walnuts and cocoa nibs, along with berries or dried bananas as toppings.

Fill your bowl with ice cream and top it with all your yummy extras, pour the homemade chocolate sauce on top and dig in to your ice cream dream!
